Product Story, Production Method & Cultural Heritage

Product Story & History

Antalya Topak Fries; It is a deep-rooted meat dish specific to Antalya and Kumluca region, registered by the Turkish Patent and Trademark Office on 11.07.2024 with the registration number 1613 as a Geographic Sign. This dish, one of the centuries-old traditional flavors of Yoruk culinary culture, takes its name from the fact that the meat is chopped into fist-sized "lumps", sealed and cooked.

Distinctive Features & Material Profile

In its traditional recipe, bone-in goat or kid meat (preferably the forearm or leg part) fed by the rich maquis flora of the Mediterranean and Taurus Mountains is used. The most distinctive aromatic feature of the dish is the cinnamon sticks, cloves, black peppercorns and allspice used in the cooking process. This balance of spices breaks the unique smell of goat meat and gives it a unique flavor and depth.

Traditional Production & Cooking Method

1. Preparation and Sealing of Meat: Meat with bones is cut into fist (pellet) sized pieces. It is seared in large cauldrons or pots in hot oil (or traditional tallow) until the outside turns golden yellow like a pomegranate.

2. Tomato Paste & Onion Stuff: In a separate pot, chopped onions are browned, tomato and pepper paste and red pepper powder are added and roasted.

3. Cooking on Low Heat: The sealed lumps of meat are combined with the sauce, and enough boiling water is added to cover it. Add cinnamon and cloves and cook slowly over low heat for 2 to 2.5 hours until the meat reaches the consistency of Turkish delight that can be separated from the bone.

Sensory Qualities & Flavor Profile

It offers a satisfying flavor balance that envelops the palate with its tender and juicy meat texture like Turkish delight, the silky aroma of cinnamon and cloves integrated with the broth, and its dense tomato paste juice.

Traditional Service & Consumption Culture

Antalya Topak Fries; In the region, it is the crowning main dish especially at weddings, holidays, Mawlid ceremonies, plateau migrations and special invitation tables. It is served hot on traditional copper pans. It is served with buttered rice pilaf, fresh village bread and Antalya's trademarked tarator.

Geographical Border & Local Importance

The geographical border of the product covers the entire province of Antalya (especially Kumluca, Finike, Elmalı, Korkuteli, Kaş, Muratpaşa and Kepez). The rich vegetation of the Taurus pastures and the local Yoruk craftsmanship tradition are the main source of the flavor character of the product.
