About & Visitor Guide
History and General Information / Local Legends and Folklore Located on the historical Silk Road and ancient caravan route, Çerkeş is one of the most established culinary centers supplying meat and desserts to the Ottoman palace cuisine. 'Circassian Baklava', registered by the Turkish Patent and Trademark Office, is prepared by sprinkling 40 layers of thin hand-rolled dough, unique to the region, with plenty of walnuts and baking it slowly in a stone oven with pure village butter; Its cut is unique in the form of 'finger baklava'. The traditional Çerkeş Pastrami, produced from the meat of cattle grazing in the plateaus of Çerkeş, and the flavor of Curd, marinated in bone broth, is a centuries-old winter feast tradition. Evliya Çelebi praised the taste of Çerkeş's meat pastries and desserts in his Travelogue.
