Adana Bici Bici

A refreshing traditional dessert served by cooking and cooling water and starch and chopping them into cubes, sprinkling clean grated snow or ice cubes on top, adding rose water, red sherbet and powdered sugar.

History: It is a unique street delicacy that started with the tradition of carrying snow from the Taurus Mountains to the city on the back of a mule, and has been consumed at mobile stalls in the hot Adana summers since the 19th century.

Production Method: Starch is cooked to a jelly consistency, poured into trays and allowed to harden. At the moment of consumption, it is blended with grated pure ice, natural rose water and cherry/barberry sugar sherbet.
